My husband and I have been trying to purge our house of unnecessary things lately. I feel like we are surrounded by so much clutter. While our house is probably no worse than most as far as clutter goes, we both function best when our house is clean and uncluttered.

Our kitchen has been a particular challenge for us. Who ever designed our kitchen was not the most thoughtful of souls. Given the size of our kitchen we have a shocking shortage of cabinets. I’ve definitely lived with smaller kitchens…but that was back before I had children and all the separate kids dishes that go with them.

One of the first things to go were most of our leftover storage containers. Next, thanks to Neoflam, will be many of my collection of pots and pans. Neoflam sent us their new Neoflam MIDASPlusTM cookware set to use.

At just 1/3 the weight of cast iron, the Neoflam MIDASPlusTM is made of cast aluminum which I’ve learned in my internet research is great for cooking because it conducts heat quickly and evenly. It is coated with Ecolon™ non-stick ceramic coating which makes for an ultra-non-stick surface.

You do have to be extremely careful with ceramic coated cookware though. We have been very gentle with our Neoflam MIDAS Plus cookware. We always use the nesting pads that came with the set. We always use wood or plastic utensils when cooking and yet one of the pans already (after about 1 month of use) has a very small chip in the ceramic coating.

And then, later, to the refrigerator to store our leftovers…of which we had plenty!

Over the past few years as we’ve transitioned to a more gluten sensitive friendly diet for the sake of my husband and two boys, I’ve learned that it is really quite easy to bake gluten-free if you know what to substitute. Classic Blueberry Crisp

Ingredients

  • Approximately 4 cups frozen or fresh blueberries (a bit more is perfectly acceptable!)
  • 1/2 cup sugar (I used Alter Eco mascobado sugar. I love the caramel-y taste!)
  • 2 tbsp corn starch
  • 1 cup water
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla
  • 1 cup oat flour (I love Bob's Red Mill Oat Flour . Feel free to substitute with the flour of your choice.)
  • 3/4 cup oats
  • 3/4 cup brown sugar
  • 2 tsp cinnamon
  • 1/2 cup + 2 tbsp real butter

Instructions

  • Preheat oven to 350°.
  • I used the round Neoflam MIDAS Plus frying pan. You can also use an 11 x 7 inch baking pan.
  • Spread the blueberries on the bottom of the pan.

  • In a small saucepan over medium heat combine the sugar, cornstarch, water and lemon juice. Cook and stir until thick and clear. Then add the vanilla.

  • Pour over the blueberries and stir gently.

  • In a bowl combine the flour with oats, brown sugar and cinnamon.
  • Add in the melted butter; mix until crumbly (I start mixing with a spoon then finish mixing with my hands). Sprinkle mixture over top of the blueberries.

  • Bake for 30-35 minutes, or until blueberry mixture bubbles and the topping is brown.
