As a nation, we surely have our own, unique, and special tradition, On January First, it is imperative that this tradition which is to eat squash soup(soup joumou) is observed.

Squash soup , or better yet “soup joumou”, is a special Haitian soup, a fabulous stuffed meal made of several vegetables and legumes such as yellow squash (joumou or giraumon), potatoes, cabbage, turnips, fresh parsley, and carrots, well seasoned beef or ribs, macaroni and spaghetti.

Serving and eating soup joumou on January First, the Haitian independence Day, is a sacred gesture incorporated to the celebrations due to the fact that it ends slavery and opens the door to freedom for Haitians.

During the colonization period in Saint-Domingue(now Haiti) , only the French masters would eat this soup for celebrations and forbid the slaves to ever have it. So, on January 1, 1804 to really celebrate freedom, or express victory, the Emperor Jean Jacques Dessalines advised his wife to cook and offer this soup to the former slaves as a slap to the defeated masters . They happily ate what they could not have.

The equation is simply: Haitian Soup Joumou = Symbol of Liberty.

Beef marinate made by crushing 4 garlic cloves, 1 teaspoonthyme1/4 teaspoon pepper, shallot and 2 sliced scallions and 2 teaspoons of salt
1-pound piece of beef stew meat
10 cups water (add more later if necessary to make soup less thick)
1 wholescotchbonnetpepperwith stem

2 pounds squash (or winter squash / butternut), peeled and chopped -2 packages frozen squash will also do)
2 carrots peeled and sliced
2 stalks celery sliced lengthwise and cut into pieces
5 parsley sprigs
1 large onion cubed
2 medium turnips peeled and cubed
2 medium potatoes peeled and cubed
1 pound cabbage sliced fine and chopped
1/4 pound vermicelli or other thin pasta, broken into shorter lengths,or macaroni if you prefer
2 limes juiced
1/4 can tomato paste (for browning meat)
1/2 cup or 1 can tomato sauce
1 low sodium beef bouillon cube (if you’d like more flavor)

Directions

1.In a medium pot, cook squash in over medium heat in 6 cups water for 30 minutes. Puree squash in the water.
While squash is cooking, clean meat with lime, rinse with hot water and drain. Marinate meat with meat rub. Rub the meat with the spice paste-scallions, onion, thyme, garlic, shallot, , green pepper, salt and black pepper ground together. (For an enhanced flavor, you can marinate the meat from 1 hour up to one day in advance .)
2. In stockpot, add the meat with the oil and tomato paste and brown by adding small amounts of water tocaramelizethe meat. Cook covered over medium heat for 20 minutes. Add 3 cups water and pureed squash and bring to a boil.

3. Add the cabbage, carrots,celery, onion, turnips, tomato sauce, potato andparsleyto the soup, bring to a boil, then reduce heat and simmer for 1 hour with a whole scotch bonnet on top. ( The whole scotch bonnet is for flavoring not to make the soup «hot». Remember to find and remove the pepper as you stir the soup and remove it before it bursts)
6. Add the spaghetti broken in to short pieces and cook until soft and tender.
7. Taste and add a minimalamountof salt, black pepper or hot pepper to taste.
8. Turn off the heat, cover the pot, and let sit until ready to serve.

Makes 10 1-cup servings.

Suite à la victoire du peuple Haïtien sur les redoutées troupes de Napoléon, les Haïtiens se sont librement adonnés à cuisiner une soupe pleine de giraumon, de céleri, de malanga, d’oignons, de carottes, de pommes de terres, de choux et de viande qui, apparemment, leur étaient interdite lorsque esclave.

Aujourd’hui, cette soupe est associée à la nouvelle année mais surtout à la fin de l’esclavage du peuple Haïtien. C’est pour cette raison que le premier Janvier, dans tous les foyers haïtiens la «soup joumou» est fièrement préparée.

    • 1 échalote coupée en petite rondelle

    • 3 cuillères à table d’huile pour la cuisson

    • Pour le Giraumon:

    • 2.5 Livres de Giraumon grossièrement coupé en cube

    • 1 cuillère à table d’épice haïtienne tout-trempé

    • 1 cube de bouillon de poulet (Maggie ou autre)

    • 1 cuillère à thé de sel

    • 3 gousses d’ails sans peau.

    • Pour la «soup joumou» :

    • La viande cuite lors de l’étape 1

    • La purée de giraumon de l’étape 2

    • 3 tasses de choux coupés grossièrement (couper en carrés d’approximativement 1 pouce par 1 pouce)

    • 2 carottes de grosseur moyenne coupées en rondelle

    • 2 branches de céleri avec leurs feuilles (si possible) coupés en rondelle

    • 1 navet coupé en cube

    • 1 oignon coupé en rondelle puis en deux

    • 2 patates de grosseur moyenne

    • ½ jus de lime ou citron

    • 1 piment scotch bonnet piqué de 4 clous de girofle

    • 1 tasse de pâtes alimentaire (penne) ou de votre choix (spaghetti, spaghettini, macaroni etc.)

    • 1 cuillère à table d’épice haitienne (tout-trempé)

    • 1 cube de bouillon de poulet (Maggi ou autre)

  • sel et poivre au goût

Haitian «epis» (spice), a well guarded secret ingredient found in most Haitian homes

    1. ÉTAPE 1:
      La viande de boeuf:

    1. Tout comme le griot, la viande de boeuf de la «soup joumou» se doit d’être bien assaisonné; non seulement elle donne un bon goût à la viande mais son assaisonnement se mariera au bouillon de la soupe et lui donnera beaucoup de sa saveur

    1. 1.1 Assaisonnement de la viande:

  1. Après avoir nettoyé et assaisonné la viande, laisser reposer au minimum 1 heure (24 heures est encore mieux)

    1. 1.2 Cuisson de la viande:

    1. Mettre les 3 cuillères à table d’huile dans le fond d’une casserole à feu moyen et y ajouter les morceaux de viande. Lorsque tous les morceaux de viande sont dans la casserole, baissez à feu doux et laisser suer la viande pendant approximativement 20 minutes.

  1. Ensuite mettre de coté et réserver.

    1. ÉTAPE 2:
      Préparation du giraumon:

    1. Pendant la cuisson de la viande, faire bouillir les morceaux de giraumon dans approximativement 8 tasses d’eau.

    1. Assaisonner l’eau avec:

    1. La cuillère à table d’épice haïtienne, le cube de bouillon de poulet, la cuillère à thé de sel, ainsi que les 3 gousses d’ails.

  1. Mélanger et réduire en purée

  2. **** NB: CONSERVER L’EAU DE CUISSON POUR LA SOUPE ***

    1. ÉTAPE 3:
      Pour la «soup joumou»:

    1. Utiliser la casserole de viande cuite de l’étape 1 et y ajouter la purée de giraumon ainsi que le reste des ingrédients pour la soupe sauf les pâtes alimentaires que vous allez ajouter approximativement 10 minutes avant la fin de la cuisson de la soupe.

    1. Utiliser l’eau de cuisson des giraumons et totaliser approximativement 6 tasses de liquide. Cuire a feu moyen approximativement 30 minutes.

  1. S’il vous manque du liquide ou si la soupe semble trop épaisse, ajouter de l’eau jusqu’à la

    consistance désirée

Façon facile et rapide pour de peler le giraumon:

La peau du giraumon est très dure et difficile à peler. SVP soyez vigilant. La meilleure façon que je connaisse pour peler le giraumon est à l’aide d’un couteau du chef.

Couper le giraumon en deux et mettre la partie plate contre une surface droite et plane.

Peler la peau de haut en bas en maintenant, solidement, le giraumon, mais en gardant la main qui le tient toujours derrière le couteau.
